Limoncello for real

So finally we got today the alcohol - goooood ethanol. Which means - Filippo's dad's recipe came out again:

10 organic lemons, peel removed
(10 La buccia gialla)

1 Liter 95% ethanol
(1L 95% alcool)

Infuse inside a carafe for 7 days in the dark. - or longer
(Infusione sette giorni al Buio)

Then filter off the peel.

Prepare a sugar syrup by cooking 1 kg of sugar with 1,2 Liter of water. Let it cool down to room temperature and add the infused alcohol. Keep it in the dark for 40 days.

Then bottle it. Make sure to keep one bottle in the freezer in order to serve ice cold as digestive.
