granola

- this way one can cut it into bars and take on a hike

1 kg outs ('haver flokken')
2 cups bran ('kleie')
250 g cocos ('kokos rapsel')
seeds (linseed, pumpkin, sunflower, etc.)
nuts (cashew, pecan, brazilian, etc.) - break the nuts smaller
10 ml cinnamon ('zimt')
salt

Set oven at 180 deg C.
Mix al these together and bake in a flat baking sheet for about 25 min until brown. Turn often so all get equally brown.

In a pot on the stove, cook together for about 15-20 min:
500 g butter
1 kg honey
250 g brown sugar
Remove from stove and add 10 ml vanilla.

Pour the sauce over the baked dry ingredients, mix well and bake another 20 min at 180 degC, turning the mix every 5 min. 

When done, add 250 g cranberries.
If meant for granola as cereal, let it cool.
If meant as bars for a hike or so, press it very tightly into a smeared baking tray. Watch out - the hot sugar mix is very hot - I use rubber gloves when I press it into the tray. (baking paper is also very useful in the tray) This is the tricky part - to press it really tight - when not, it crumbles very easily when cutting the bars, or when biting it. I sometimes roll it into little balls which work well too. 

When I want to impress someone - add a few lines of melted white chocolate (just like that, or mixed with natural yoghurt) over the bars.
